Week one of school is in the books. I don’t recall any tears, and we all survived. Now to get through week two.

The Blackstone that I got Chuck has made Sunday meal prepping so much easier. Our lunch bowls this week consist of quinoa, chicken that I seasoned with a fajita seasoning, and a homemade black bean salsa. Now by homemade I mean, a can of corn, a can of black beans, a can of Rotel, and some red onion.

I made 3 cups of quinoa today because on Tuesday or Wednesday night, I will make a mock fried rice with it. I would honestly choose that over traditional fried rice any day. Left over quinoa, some frozen peas and carrots, a couple of eggs and soy sauce and I’ve got a cheap dinner and left over lunches for Chuck on Thursday and Friday. I don’t get sick of having the same lunch 3 days in a row but 5 would be pushing it. I try and switch it up for him. I’m home on Thursdays and Fridays so I don’t have to worry about that.

As I was loading the dishwasher, I wondered how much faster it would be to just wash the damn dishes by hand. I mean honestly though. The bowls take up so much room, and all the water and energy wasted seems like overkill. Then I sat down and the more I think about it the hot water from the dishwasher has a nice sterilization effect. Maybe I’ll get a second wind, and maybe I’ll just throw the pod in and hit start.
